Pancakes

Ingredients

  • 1 ½ cups all-purpose flour

  • ⅓ cup granulated sugar

  • 1 tablespoon baking powder

  • ¾ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1 cup milk of choice

  • ¼ cup oil (or melted butter)

Optional add-ins

  • Chocolate chips

  • Fresh fruit (blueberries, raspberries, or sliced bananas work great)

  • Chopped nuts of choice

  • Marshmallows

Directions

  1. In a bowl, whisk the dry ingredients together until well combined

  2. Create a well in the center and add the vanilla extract, eggs, and milk. Whisk to combine

  3. Slowly drizzle in the oil (or melted butter), continuing to whisk until the mixture is smooth

  4. If using add-ins, gently fold them into the batter at this stage

  5. Heat a pan over medium heat and lightly grease with oil to prevent sticking

  6. Pour the batter into the pan to your desired pancake size

  7. Let the surface bubble before flipping and cooking the other side until golden

  8. Top with your favourite ingredients and finish with a drizzle of maple syrup
